Corte Sant'Alda is a renowned winery located in the Valpolicella region of Veneto, Italy, known for its focus on high-quality, organic, and biodynamic wines. Founded and run by Marinella Camerani, it has become a standout estate in the region for its dedication to both traditional winemaking techniques and sustainable practices. The Ripasso technique involves "repassing" the Valpolicella wine over the skins of dried grapes used in Amarone or Recioto. This second fermentation adds depth, richness, and complexity, borrowing both flavours and tannins from the dried skins.
