A pioneer in biodynamic viticulture, Corte Sant'Alda crafts wines that reflect the essence of Valpolicella’s terroir with precision and authenticity. Their Amarone della Valpolicella is made using the traditional appassimento method, where hand-harvested Corvina, Rondinella, and Molinara grapes are dried for months to concentrate their flavors. Fermentation takes place slowly, followed by extended aging in large oak barrels to develop depth and structure. The result is a powerful yet refined Amarone, offering intense aromas of dark cherry, dried plum, and fig, layered with notes of cocoa, sweet spice, and tobacco. The palate is rich and full-bodied, with velvety tannins and a lingering finish marked by hints of balsamic and earthy minerality. A beautifully crafted Amarone that showcases both elegance and intensity.
