Made only in top vintages, all the grapes are picked by hand after an extra two weeks of maturation on the vine (thus risking the ire of the autumn rains). Only natural yeasts are used in a lengthy fermentation to preserve all the complexity of this wonderful variety. This wine sees no oak but stays on its lees for almost two years in stainless steel tanks. Try this with salmon (smoked or otherwise), chicken, or anything where you would usually reach for 1er Cru white burgundy. Yup – it really is that good.
